- Oil 2 tbsp
- Onion, finely chopped 1/4 cup
- Garlic cloves, finely chopped 3
- Ginger, grated 1 tbsp
- Lemongrass, finely chopped 1 tbsp
- Mangoes, chopped into small cubes 3/4 cup
- Bell pepper, finely chopped 1
- Mushroom, sliced 5
- Corns 1/2 cup
- Spring onion, finely chopped 2
- Cilantro, finely chopped 2 to 3 tbsp
- Cooked rice 2 cups
- Sugar 1 tsp
- Salt to taste
- Soy sauce 1-1/2 tbsp
- Red pepper flakes to taste
- Pepper powder to taste
Heat oil in pan or wok on medium-high heat. Once the oil is hot, add onion, garlic, ginger, lemongrass, and saute until the onion becomes translucent and garlic turns fragrant. Now add mangoes and all the veggies sugar, salt to taste and sauté it on medium-high flame for 2 to 3 minutes. Add the rice and cook on medium-high to high flame. Finally, add soy sauce and toss till combined. Add red pepper flakes and pepper powder and toss for once last time. Thai Mango Fried Rice is ready. Garnish it with some more spring onions, cilantro. Serve and enjoy.
- Chicken cubed 300 gm
- Olive oil 1 tbsp
- Lime juiced ½ cup
- Chili powder 2 tsp
- Brown sugar 1 tsp
- Garlic paste 1tsp
- Salt 1 tsp
- Bell pepper (cubed) 2
- Red onion (cubed) 1
- Mango 1
- Lime juiced ½
- Water ¼ cup
- Brown sugar 3 tbsp
Heat grill. In a large bowl, stir together the chicken cubes with all ingredients
Using large skewers, thread the chicken, alternating with bell pepper and red onion slices. Grill the skewers for approximately 10 total minutes, turning every 2 minutes, until chicken is cooked through. Mango Sauce Place all ingredients in the blender, and blend for a minute, or until smooth.
