  • Eggplant ½ kg
  • Tomatoes 750 gram
  • Mustard seeds 1 tsp
  • Fenugreek seeds ½ tsp
  • Curry leaves 8-10
  • Tamarind pulp 2 tbsp
  • Crushed garlic as required
  • Oil 1 cup
  • Salt to taste
  • Red chili powder 1 tsp
  • Turmeric powder ½ tsp
  • Green coriander as required
  • Green chilies as required
  • Oil (for eggplant frying) as required
  • Whole red chilies 8-10
  • White cumin 1 tsp

Cut thick pieces of eggplant and deep fry them. Now boil tomatoes, blend them and make them thick by cooking. Then heat oil and fry mustard seeds and fenugreek seeds. Then add whole red chili and fry it then add crushed garlic and fry. Now add white cumin, tomato, salt, red chili powder and turmeric then saute gravy well. Now add fry eggplant, whole green chilies, curry leaves and tamarind pulp and let it simmer. Then take out in dish and garnish with green coriander.


  • Chicken 750 gm
  • Crushed fried onion ½ cup
  • Ginger garlic paste 1 tbsp
  • Salt 1- ½ tsp
  • Red chili powder 1- ½ tsp
  • Turmeric ¼ tsp
  • Crushed coriander 1 tbsp
  • Clarified butter ¾ cup
  • Yogurt 1 Cup
  • All spice Mix 1 tbsp
  • Crushed poppy seed 1 tbsp
  • Crushed coconut 1 tbsp
  • Green cardamom 6-8
  • Screwpine water few drops
  • Finely chopped ginger 2 tbsp
  • Boiled eggs 2-3
  • All spice powder ½ tsp

Heat clarified butter in a pan and fry chicken, when the chicken’s color changes place it separately. Now in same clarified butter fry ginger garlic paste, salt, red chili, turmeric, coriander and whole all spice. Add yogurt and cook. Now add fried chicken and cook further. Add poppy seed, crushed coconut, crushed whole spices, fried crushed onions, green cardamom and screw pine water, add ½ cup water and let simmer. When the dish gets ready, garnishes with boiled eggs and finely chopped ginger.
