Mini Tiramisu With A Twist | Evening With Shireen | Chef Shireen Anwar

Ingredients:

  • Sponge cake 1
  • Caster sugar 1/3 cup
  • Hot water ¾ cup
  • Coffee 2 tbsp
  • Whipped cream 2 cups
  • Cream cheese 8 ounce
  • Vanilla ½ tsp
  • Melted chocolate 4 ounce
  • Caster sugar ½ cup
  • Milk ¼ cup
  • Grated chocolate for garnishing

 

Method:

In a bowl beat cream cheese, sugar, add in milk and vanilla, stir in 4 ounce 4 ounce melted chocolate, put sponge cake cubes into each dessert each, drizzle a tbsp of coffee liquid over cake, then a heaped tbsp of cream cheese mixture, repeat layers once again, decorate top with whipped cream and grated chocolate.

Ingredients to marinate:

  • Chicken 12 pieces 1 kg
  • Yogurt whipped 1 ½ cup
  • Ginger garlic paste 2 tbsp
  • Almonds ground 2 tbsp
  • Salt 2 tsp
  • Mace grinded ¼ tsp
  • Nutmeg grinded ¼
  • Cloves grinded ¼ tsp
  • Chili powder 2 tsp

Other ingredients :

  • Rice boiled 750 gm
  • bay leaf 1
  • Black cardamom 2
  • Onion ground 2 large
  • Green chilies ground 6
  • Saffron soaked ½ tsp
  • Coriander leaves chopped ½ cup
  • Mint leaves ½ cup
  • Cardamom grinded ½ tsp

 

Method:

Marinate chicken with yogurt, ginger garlic paste, chili powder, salt, grounded almonds, cardamom, mace, nutmeg and cloves for 1 hour, heat oil add bay leaf, black cardamom, fry for 2 mins, add grinded onion and grinded green chili, fry till golden, add in marinated chicken, fry for 10 mins, add 2 cups water, cover and cook until chicken tender, then give a layer of rice and chicken, top with greens, zafran and kewra, put it on dum for 40 mins.

Ingredients:

  • Chicken or mutton liver ½ kg
  • Lemon juice 2 tbsp
  • Salt 1 tsp
  • Chili powder 1 tsp
  • Ginger garlic paste 1 tsp

Ingredients for masala:

  • Yogurt ½ cup
  • Cream 3 tbsp
  • Onion chopped ½ cup
  • Tomatoes blended 2
  • Chili powder 1 ½ tsp
  • Salt ½ tsp
  • Turmeric ½ tsp
  • Allspice 1 tsp
  • Cumin roasted & crushed 1 tsp
  • Ginger garlic 1 tsp
  • Butter 1 tbsp
  • Oil ¼ cup
  • Chicken tikka masala 1 tbsp

 

Method:

Marinate liver with lemon juice, salt, chili powder and ginger garlic paste and fry for 5 mins and keep aside. Heat butter and oil, add cumin seeds, add chopped onion, fry for 5 mins, add ginger garlic, chili powder, turmeric and salt, fry for 1 mins, add in blended tomatoes, fry till oil comes on top, add yogurt, cream, chicken tikka masala, allspice, add in fried liver and leave it on dum.
