Ingredients:

  • Mutton 750 gm
  • Onion 1 cup chopped
  • Split chickpea gram 1 ½ cup soaked and boiled till tender
  • Tomatoes chopperized 3
  • Chili powder 1 tbsp
  • Turmeric ½ tsp
  • Ginger garlic paste 1 tbsp
  • Salt 2 tsp
  • Allspice 1 tbsp
  • Ginger julienne 1 tbsp
  • Coriander leaves chopped 2 tbsp
  • Qorma masala 1 tbsp heaped
  • Oil ¾ cup
  • White cumin seeds 1 tsp
  • Curry leaves 15-20
  • Butter 3 ounce (for tempering)
  • Green chilies 4-5

 

 

METHOD:

Heat oil in a pan, add white cumin seeds and curry leaves, slightly sizzle, add chopped onion, fry till light golden, add ginger garlic paste, add in salt, chili powder, turmeric, all spice, ginger julienne, korma masala and mutton, fry well, add 3 cups water, cover and cook till tender, then open and add chana daal, green chilies, coriander leaves, cook till done. Give temper of butter and serve with nan.

Ingredients:

  • Mutton 1 kg
  • Green chilies 6
  • Mixed whole spices 1 tbsp
  • White cumin seeds 1 tsp
  • Ginger garlic paste 1 ½ tsp
  • Salt 1 tsp
  • Chili powder 1 tsp
  • Turmeric ½ tsp
  • Coriander powder 2 tbsp heaped
  • Water 5 cups
  • Rice 750 gm boiled with 3 tbsp salt and ½ tsp black cumin seeds
  • Tomatoes 2 cut in round slices
  • Green chilies 10 whole
  • Lemon slices 1
  • Coriander leaves chopped ½ bunch
  • Mint leaves chopped ½ bunch
  • Brown onion ¼ cup
  • Plum soaked in water 12
  • Mace grinded ¼ tsp
  • Nutmeg grinded ¼ tsp
  • Yogurt 1 cup
  • Green cardamom 4 grinded
  • Yellow color a pinch
  • Allspice 1 tsp
  • Screwpine water 1 tbsp
  • Oil ¾ cup

 

METHOD:

Boil mutton with 5 cups water, green chilies, whole mixed spices, white cumin seeds, ginger garlic paste, salt, chili powder, turmeric, coriander powder, cover and cook till mutton tender and one and a half stock left. Boil rice with salt and black cumin till half done.

TO ASSEMBLE:

Put half boiled rice in a pan, spread with mutton, top with lemon slices, tomatoes, whole green chilies, chopped coriander and mint, brown onion, plum, then beat 1 cup yogurt, mix with yellow color, allspice, screwpine water, grinded mace, nutmeg and green cardamom, mix well. Pour on top of the mutton mixture with ¾ cup oil and remaining rice. Leave it on dum for 20 mins on tawa, mix and serve.

Achaari Raita:

Ingredients

Yogurt 250 gm whipped
Water ¼ cup
Boiled potatoes 2 cut into small tiny cubes
Onion 1 chopped
Tomato 1 chopped into tiny cubes
Green chilies 2 chopped
Garlic paste 1 tsp
Mustard seeds 1 tsp
Cumin seeds 1 tsp
Onion seeds ½ tsp
Curry leaves 12
Crushed red pepper ½ tsp
Salt ½ tsp
Coriander leaves chopped 1 tsp
Fennel seeds 1 tsp coarsely crushed
Oil ¼ cup

 

METHOD:

Heat ¼ cup oil in a fry pan, add mustard seeds, cumin seeds, curry leaves, crushed red pepper, salt, garlic paste, fry for 2 mins. In a bowl, add boiled potatoes, onion chopped, coriander chopped, fennel seeds, add the fried masala in this bowl, mix well, pour all this in the beaten yogurt, mix well and serve with biryani.
