Ingredients for Koftay:

  • Beef Mince 250 gm
  • Onion 1 medium
  • Green chilies 4-5
  • Fresh coriander (chopped) 3 tbs p
  • All spice powder 1 tsp
  • Red chili powder 1 tsp
  • Nutmeg and mace powder ½ tsp
  • Salt to taste
  • Oil 3 tbsp

 

Other Ingredients:

  • Mutton (boiled) 250 gm
  • White turnip 200 gm
  • Carrots 200gm
  • Yogurt 1/2 cup
  • Clarified butter 1/2 cup
  • Tomatoes 2
  • Fried onions 2
  • Lemons 2
  • Green chilies 4
  • Fresh coriander (chopped) few
  • Turmeric powder 1 tsp
  • White cumin powder 1 tsp
  • Red chili powder 1 tbsp
  • All spice powder 2 tsp
  • Coriander powder 2 tbsp
  • Ginger garlic paste 2 tbsp
  • Salt to taste
  • Whole all spice 1tbsp

Method:
Wash and peel, turnip and carrots and fry them and set aside. Mix all the kofta ingredients make kofta and fry all them and set aside. In a same pan add clarified butter, whole all spice, mutton, onion, turmeric, red chili powder, coriander powder, cumin powder, ginger garlic paste and tomatoes and cook until clarified butter separated add in yogurt, carrots, turnips. Cook it on a low flame. When the Masala separates, add in green Masala, all spice powder and lemon juice koftas water for gravy and Cook it for 5 minutes and simmer it and serve hot.

Ingredients:

  • Oil 1/4 cup
  • Cumin seeds 1 teaspoon
  • Green chili 2.3
  • Ginger garlic paste 1tsp
  • Green cardamom 2 pods
  • Onion (chopped) 1 medium
  • Poppy seeds 1 teaspoon
  • Water 1/2 cup
  • Fenugreek leaves (chopped) 1.5 cups
  • Salt to taste
  • Green peas (boiled) 1 cup
  • Heavy cream 1/2 cup
  • All spice powder 1 tsp
  • Fresh coriander for garnish

 

Method:
Heat 2tsp oil in a pan on medium heat. Once hot add cumin seeds and wait till the seeds crackle. Add green chili, ginger, garlic paste and green cardamom. Sauté for a minute or two. Add the roughly chopped onion and poppy seeds. Sauté for 2-3 minutes or till the onions are translucent. Remove pan from heat and let it cool down a bit. Transfer the entire mixture into a blender. Blend to a smooth paste. Set aside. In the same pan heat remaining oil and once hot add the prepared paste. Sauté for few minutes till the raw smell goes away. Add water and give a good mix. Once it comes to a little boil. Add the salt, boiled green peas and mix.
Cook for 2 minutes. Cover and let it simmer on medium-low flame for 4-5 minutes. Add the chopped fenugreek leaves and cook on high flame. Sprinkle some all spice powder on top and then add the cream and mix and switch off the heat.Garnish with chopped coriander leaves and serve hot.
