Ingredients:
For the cupcakes:

  • Chocolate, chopped 5 oz
  • Cocoa 1/3 cup
  • Coffee powder 1 tsp
  • Boiling water 1/2 cup
  • Flour 3/4 cup
  • Caster sugar 1/2 cup
  • Brown sugar 1/2 cup
  • Salt 1/2 tsp
  • Baking soda 1/2 tsp
  • Sour cream 1/2 cup
  • Oil 1/4 cup
  • Egg yolk 1
  • Egg white 2
  • White vinegar 2 tsp
  • Vanilla essence 1 tsp

For the frosting:

  • Cream 1/2 cup
  • Chopped chocolate 4 oz
  • Unsalted butter 340 gm
  • Icing sugar 2 cups
  • Cocoa powder 1 cup
  • Vanilla essence 2 tsp
  • Salt 1/4 tsp

To decorate:

  • Sprinkles as required
  • Cherries with stems as required
  • Hot fudge sauce as required

Method:
Mix the chocolatewith cocoa powder and coffee powder. Pour hot water over mixture. Whisk until smooth, and then set aside to cool. Mix flour, caster and brown sugars, salt and baking soda. Mix sour cream, oil, eggs, egg yolk, vinegar and vanilla essence into the cooled chocolate mixture until smooth. Stir in the flour mixture until smooth, being careful not to overmix. Divide the batter evenly among cupcake cases until 3/4 full. Bake at 180 degrees c until cupcakes are done about 20 minutes. Let cupcakes cool in pan on a wire rack for 10 minutes before removing from pan to cool completely, about 1 hour. Make the frosting: in a small saucepan, bring the cream to a simmer. Remove from heat and add the chopped chocolate. Let stand for a few minutes before stirring until smooth. Set aside and cool. Beat butter, icing sugar, cocoa, vanilla and salt. Add the cooled chocolate cream mixture. Continue beating until the frosting has lightened in color and texture. Pipe the frosting on the cupcakes and then put sprinkles and top with a cherry. Drizzle hot fudge sauce on top.

Ingredients:

  • Chickpea flour 1 1/2 cups
  • Rice flour 1/2 cup
  • Green chilies, chopped 2-3
  • Red chili powder 1/4 tsp
  • Ginger garlic paste 1/2 tsp
  • Onion, sliced 1
  • Finely sliced cabbage 2 cups
  • Hot oil 1 tbsp
  • Sprigs curry leaves few
  • Salt to taste
  • Oil for deep frying
  • Green chutney to serve

METHOD:
Combine rice flour and chickpea flour with salt, ginger garlic paste, red chili powder, green chilies, curry leaves, sliced onions and cabbage. Add oil and mix well. Add few tablespoons of water and mix well that it forms a slightly thick batter. Don’t add too much water. The batter should just coat the cabbage strips and onion slices.
Heat oil and drop the batter in the oil to form small fritters. Deep fry till they turn golden brown. Drain and serve with green chutney.
