Ingredients:

  • Rice ½ kg
  • White whole cumin seeds 1 tsp
  • Whole red chilies 6
  • Chili powder 1 ½ tsp heaped
  • Boiled chickpeas ½ cup
  • Boiled black chickpeas ½ cup
  • Boiled lobia ½ cup
  • Oil ¼ cup
  • Black cumin seeds ½ tsp
  • Yogurt ½ cup
  • Mixed whole spices 1 tbsp
  • Ginger garlic 1 tbsp
  • Brown onion ½ cup

 

Method:
Soak rice for 30 min ,Heat oil, add whole spices, both the cumin, ginger garlic, brown onion and fry mixture, then add yogurt, fry well, add all the three boiled beans, soaked rice, whole green chilies, and enough water for rice, cover and let it cook, then leave it on dum for 10 mins, serve with raita.

Ingredients for kabab:

  • Potatoes boiled / mashed 4
  • Split Bengal gram(chana daal) ½ cup boiled
  • Salt 1 tsp
  • Chili powder 1 tsp
  • White cumin 1 tsp
  • Black cumin 1 tsp
  • Eggs whites beaten 2
  • Buns 4-6
  • Salad leaves as required
  • Cucumber slices as required
  • Tomato slices as required
  • Oil as required

Ingredients for chatni:

  • Mint ½ bunch
  • Coriander 1 bunch
  • Green chilies 4
  • Tomatoes 1
  • Khatai powder ½ tsp
  • Salt 1 tsp leveled
  • Curd 3 tsp

 

Method:

Boil and mash potatoes. Boil daal with all the given ingredients till tender. Mash and mix with potatoes, make kababs, dip in beaten white and shallow fry. Cut the buns in half and heat in a little oil, put chatni, salad leaves, kabab, cucumber and tomato slices, top with bun and serve hot.

Ingredients:

  • Cucumber 1 peeled and grated
  • Green chili 1 finely chopped
  • Coriander / chopped 1 tbsp
  • Yogurt 1 cup whipped
  • Salt ¼ tsp
  • Onion finely chopped 2 tbsp
  • Roasted & crushed cumin ½ tsp
  • Crushed red pepper ½ tsp

 

Method:

Peel and grate the cucumber, mix all in the whipped yogurt, serve chilled.

Ingredients:

  • Split red gram (Toor daal) ¼ cup
  • Split red lentil (Masoor daal) ¼ cup
  • Split red lentil (Sabat masoor) ¼ cup
  • Split Bengal gram Chana daal ¼ cup
  • Split yellow gram peeli moung ki daal ¼ cup
  • Split green gram Green moung daal ¼ cup
  • Black lentil Mash ki daal ¼ cup
  • Turmeric ½ tsp
  • Cumin roasted and crushed ½ tsp
  • Chopped tomatoes 3
  • Chili powder 2 tsp
  • Coriander powder 1 ½ tsp
  • Allspice ½ tsp
  • Coriander leaves 4 tbsp
  • Cream 3 tbsp

Ingredients for baghar:

  • Clarified butter ½ cup
  • Garlic sliced 2 tbsp
  • Green chilies chopped 4
  • Curry leaves handful
  • Chopped onion ½ cup
  • Asafetida ¼ tsp

 

Method:

Wash all the daals together, soak for 30 mins, boil the daal along with ½ tsp turmeric, cumin, chopped tomatoes and cook till daal is completely soft, slightly mash with the spoon and add chili powder, coriander powder, allspice, coriander leaves, cream, mix and cook well, add baghar, cook for another 5 mins, serve garnished with coriander.
