Ingredients for dough:

  • Flour 2 cups
  • Sugar 1 tbsp
  • Yeast 1 tbsp
  • Salt ½ tsp
  • Lukewarm water to knead
  • Oil 2 tbsp

Ingredients for spicy mayo:

  • Mayonnaise ½ cup
  • Chili sauce 4 tbsp
  • Green chili sauce 4 tbsp
  • Crushed red pepper 1 tsp
  • Salt ¼ tsp
  • Black pepper ¼ tsp
  • Onion finely chopped 1 tbsp
  • Coriander leaves 1 tbsp,
  • Mozzarella cheese 1 ½ cup
  • Beaten egg 1 – 2

Ingredients for garlic butter:

  • Melted butter ½ cup
  • Oil ¼ cup
  • Crushed garlic 2tbsp
  • Oregano 1 tsp
  • crushed red pepper 1 tsp
  • mixed herbs ½ tsp
  • chopped coriander 1 tbsp
  • salt pinch

Ingredients for fillet:

  • Boneless chicken 400 gm
  • Ginger garlic paste 1 tbsp
  • Tikka masala 2 tbsp
  • Salt ¼ tsp
  • Lemon juice 2 tbsp


Method for dough:
Put all the ingredients in a bowl, mix and knead with lukewarm water to a soft dough, apply some oil on top, cover and leave it to rise for 1 hour.

Method for fillet:
Marinate chicken with all the given ingredients, grill with 1 tbsp oil until done, give dum of coal and keep aside.

Method for garlic butter:
In a bowl mix together ½ cup melted butter, ¼ cup oil, 2tbsp crushed garlic, 1 tsp oregano, 1 tsp crushed red pepper, mixed herbs ½ tsp, chopped coriander 1 tbsp, pinch of salt.

Mix all together for garlic butter in a bowl and keep aside.
method for spicy mayoIn a bowl add ½ cup mayonnaise, 4 tbsp chili sauce, 4 tbsp green chili sauce, 1 tsp crushed red pepper, salt ¼ tsp, black pepper ¼ tsp, onion finely chopped 1 tbsp, coriander leaves 1 tbsp, mix all well and keep aside.Mozzarella cheese 1 ½ cup Beaten egg 1 or 2 for brushing
To assembleRoll a ball of dough in oblong shape, put a dollop of spicy mayo followed by chicken tikka pieces, then some mozzarella cheese, fold slightly from both sides and roll to wrap it well, brush with beaten egg, bake in a pre-heated oven 200 d for 15 mins, once you remove from oven, brush generously with garlic butter, let it rest for 5 mins, the rolls will absorb the butter, serve it hot.


  • Mutton 750 gm
  • Tomatoes chopped 3
  • Whole spices mixed 1 tbsp
  • Salt 1 ½ tsp
  • Ginger garlic paste 2 tbsp
  • Green chili grinded 1 tbsp
  • Yogurt 1 cup

Ingredients for kadhi masala:

  • Cashew nuts 4 tbsp
  • Melon seeds 2 tbsp
  • Bengal gram 2 tbsp
  • Coriander seeds 1 tbsp
  • Fennel seed 1 tsp
  • Cumin seeds 1 tsp
  • Green cardamom 2
  • Star anise 1
  • Bay leaf 1
  • Coconut milk ½ can
  • Asafoetida 2 tbsp
  • Oil ¾ cup

In a pan put roughly chopped tomatoes, whole spices, ginger garlic paste, green chili paste, cook till tomatoes are soft, add a little water, cover and cook for 5 mins, add mutton, yogurt, fry well on high heat, pressure cook till mutton tender, make kadhi masala by grinding all the spices together very finely.now when the mutton is tender add in coconut milk, kadhi masala. In a small pan, heat ¾ cup oil, add crushed garlic 1 tbsp, 20 curry leaves, 2 whole red chilies broken, fry till golden, switch off heat and mix 1 tsp chili powder and pour on the gravy, serve hot, sprinkle some chopped coriander on top, do not mix.


  • Mixed vegetables 2 cups
  • Capsicum 2
  • Baby corn as required
  • Carrot 1
  • Onion 2
  • Cabbage 1

Ingredients for sauce:

  • Oil ¼ cup
  • Chopped garlic 1 tsp heaped
  • Green chilies 2 chopped
  • Onion chopped 1 tbsp
  • Ketchup ½ cup
  • Chili sauce 4 tbsp
  • Green chili sauce 4 tbsp
  • Vinegar 1 tbsp
  • Honey 1 tbsp
  • Soy sauce 1 tbsp
  • White pepper ½ tsp
  • Orange color 1 pinch

Other ingredients:

  • Flour 6 tbsp
  • Corn flour 6 tbsp
  • Salt ¼ tsp
  • Black pepper ¼ tsp
  • Baking soda ¼ tsp heaped
  • Chilled water to make paste

Mix together flour, corn flour, seasonings, and make into a paste with cold water, mix the diced veggies and let it marinate for 30 mins, deep fry till golden, keep aside.
Method for sauce Heat oil in a wok, add chopped garlic, green chilies,, onion, fry for 2 to 3 mins, add all the sauces, mix well, re-fry the fried veggies till more golden and crisp, just before serving toss in the prepared sauce, garnish with spring onion leaves finely chopped or coriander leaves, serve immediately.
