Ingredients:

  • White bread 6 sliced
  • Green chutney ¼ cup
  • Cucumber (peeled and thinly sliced) 1 small
  • Tomato (ripe but firm, thinly sliced) 1
  • Potato (steamed, peeled and thinly sliced) 1 small
  • Onion (halves & thinly sliced) 1
  • Green peppers (halved and thinly sliced) 1
  • Beetroot (steamed & thinly sliced) 1
  • Butter 1tbsp
  • Ketchup 1tbsp
  • Chat masala to taste
  • Salt & pepper to taste

 

Method:
Apply up to 1 tablespoon of chutney level on one side of the bread.
Take one sliced and start layering veggies over the chutney side. Start with steamed veggies. Then layer over cucumbers and tomatoes. Finally layer onions/bell peppers making sure you have a nice flat layer of veggies.
Sprinkle with chat masala or salt & pepper. Finally place the second slice of bread chutney side down over the veggies. Cut the sandwich in half lengthwise or diagonally and serve hot with ketchup.

INGREDIENTS FOR CHOLE:

  • Chickpea cooked 1 cup
  • Oil 4 tbsp
  • Bay leaf 1
  • Cinnamon stick 1 inch
  • Cumin seeds ½ tsp
  • Onion (finely chopped) 1
  • Ginger garlic paste 1 tsp
  • Tomatoes (finely chopped) 2
  • Cayenne pepper powder 1 tbsp
  • Turmeric powder ½ tsp
  • Coriander powder 1 tsp
  • Cumin powder ½ tsp
  • Dry mango powder ¾ tsp
  • Salt to taste
  • All spice powder ½ tsp
  • Water 2 cups
  • Coriander leaves (finely chopped) 2 tsp

INGREDIENTS FOR BHATURE:

  • Flour 2 cups
  • Semolina 1 tbsp
  • Sugar 1 tsp
  • Salt to taste
  • Baking powder ½ tsp
  • Baking soda ¼ tsp
  • Oil 2 tsp
  • Yogurt 1 cup

OTHER INGREDIENTS:

  • Flour for dusting
  • Oil for deep frying

 

METHOD FOR CHOLE:

Heat oil in cooker, sauté bay leaf, cinnamon stick and cumin seeds till they turn aromatic. Then add finely chopped onions and ginger garlic paste. Sauté till it turns golden brown. Now add tomatoes and sauté till they start releasing oil.
Further, add cayenne pepper powder, turmeric powder, coriander powder, cumin powder, dry mango powder, all spice powder and salt. Sauté for a minute. Then add chickpea and 2 cups of water, give a good mix. Check the seasonings. Cook on medium flame. Now mix well and garnish with coriander leaves. Serve with bhatura.

METHOD FOR BHATURA DOUGH:

In a large mixing bowl take flour, semolina, sugar and salt. Then add baking powder and baking soda and mix well. Now add oil and rub with the flour, also add curd and start to knead dough, knead and punch the dough well for atleast 5 minutes, Then grease the dough with oil and cover with moist cloth. Now set aside for at least 2 hours. Then roll the dough evenly into circles using rolling pin. Now roll neither too thin nor thick. Then heat oil in a deep frying pan or kadai. Add one bhatura and, press with the spoon to puff up once they begin to puff, splash oil over the bhatura till they puff completely. Flip over and fry the bhatura till golden brown all over. Then drain the poori into tissue paper to remove excess oil. Fry all batura same way. Lastly serve bhatura with chole curry.

Ingredients:

  • Dry pomegranate seeds 3-4 tsp
  • Onion (medium) 1
  • Cumin ½ tsp
  • Green chili (chopped) 1
  • Lemon juice few drops
  • Sugar ½ tsp
  • Chaat masala ½ tsp
  • Water 3-4 tbsp
  • Back salt as required

 

Method:
In a blender, mix all the ingredients and serve.
