Roasted chicken with gravy
1 whole Chicken with skin
Celery 1 cup
Leak 1 cup
Onion 2 medium size
Carrot 1 cup
Garlic paste 1 tbsp
Mix dry herbs 1 tbsp
Salt 1 tsp or according to taste
Crushed black pepper 1 tsp
Mustered paste ½ tbsp
Worcester shire sauce 2/1 tbsp
Lemon juice 1 tbsp
Bay leave 1
Chicken stock 1 cup
Butter 1 tbsp
Method,
In a small bowl mix, garlic paste, salt, pepper, mustered paste, Worcester shire sauce, dry mixed herbs and lemon juice. Marinate whole chicken in this mixture for at least 30 minutes. In a wok put little butter and melt it over medium heat, transfer chicken in it and cook all sides till you will get nice golden colour on chicken, keep in a plate. Now set vegetables in dish, pour chicken stock, bay leave & 1 tblsp of Worcester shire sauce on it and set some sort of stand on it to keep little distance between vegetables and chicken. Set the chicken on stand along with all juices dripping from chicken, cover with aluminum foil. Put it in pre heated oven for 45 minutes over 220. If chicken size is big, it will take few minutes more.
When chicken is done take all vegetables with stock and blend it well, then strain it. In saucepan mix 1 tblsp butter and 1 tblsp flour. Cook till blond colour. Pour strain mixture of blended vegetables, adjust salt and pepper and cook till thick.
