Ingredients:

  • Chicken with bone 500 gm
  • Oil ¼ cup
  • Onion chopped 1 large
  • Ginger & garlic paste 1 tbsp
  • Green chili chopped 1 large
  • Tomato chopped ½ cup
  • Salt as required
  • Red chili powder 1 tbsp
  • Turmeric powder ¼ tsp
  • Coriander powder 1 tsp
  • Garam masala powder 1 tsp
  • Roasted coriander crushed 1 tbsp
  • Roasted cumin crushed 1 tsp
  • Lemon juice 2 tbsp
  • Green chili small 3 to 4
  • Fresh coriander chopped 1 tbsp
  • Water apr

Method:
Pan men oil garam ker kay lehsan, adrak or hari michon kay sath chicken ko fry ker lain ab tamam sukhay msalay dal ker bhoon lain phir tomato or piyaz dal ker thora sa pani shamil karen phir 10 se 15 minutes tak dum per chor den ab dobara se chicken ki bhunaae karen yahan tak kay oil or gravy alag hojae phir akhir meh hari mirch, lemon juice or hara dhanai dal ker mazeed 2 se3 minutes tak pakaen.

Ingredients for Rice:

  • Rice 500 gm
  • Oil ¼ cup
  • Onion slices ½ cup
  • Garlic chopped 1 tbsp
  • Salt as required
  • White pepper 1tsp
  • Chicken powder 1 tbsp
  • Cinnamon sticks 1 to 2
  • Water as required

Ingredients to Garnish:

  • Carrot julienne 1 cup
  • Raisins 2 tbsp
  • Sugar ¼ cup
  • Water ¼ cup

Ingredients to serve:

  • Rice 1 dish
  • chicken tikka boti 10 se 12
  • seekh kabab 5 to 6
  • Wooden skewers for tikka boti

Method:
Rice bananay kay liye pan men oil garam ker kay onion ko light brown ker lain phir lehsan or darchini dal ker fry ker lain phir salt, white pepper, chicken powder or pani dal ker 15 se 20 minutes tak pakaen phir chawal dal ker 4 se 5 minutes tak pakaen phir phir chawlon ko 10 se 15 minutes tak dum per chor den.
Garnish bananay kay liye pan men sugar, water carrot or kishmish dal ker itna pakaen kay gajar gal jae or chashni garhi hojae.
Ab serving dish men rice bicha ker upper se garnish lagaen or phir chicken tikka boti or seekh kabab rakh ker serve karen.

Ingredients to marinate:

  • Chicken drum sticks 4 to 5
  • Ginger & garlic paste 1 tbsp
  • Green chili paste 1 tbsp
  • Oil 2 to 3 tbsp
  • Yogurt ¼ cup
  • Salt as required
  • Red chili powder 1 tsp
  • Turmeric powder ½ tsp
  • Cumin powder 1 tsp
  • Whole spice powder ½ tsp
  • Onion diced ½ cup
  • Capsicum diced ½ cup
  • Potato boiled & cube ½ cup

Method:
Ek mixing bowl men chicken, ginger, garlic & green paste, dahi or tamam sukhay masalay dal ker mix ker lain or 1 se 2 hours kay liye fridge men rakh den ab ek pan men thora sa oil garam ker kay marinated chicken shamil karen or achi garhan bhoon ker 5 minutes kay liye dum per chor den phir dhakan hata ker chicken ko bhoon ker masala dry ker den phir onion, capsicum or potato dal ker mix ker kay cholha band ker den.
Ab aluminum foil per ek drum stick or us kay sath sabziyan rakh ker foil ko band ker len or isi tarahan tamam foil bana lain ab steamer men foil ko rakh ker 30 se 35 minutes tak stream ker kay garma garam serve karen.
