Ingredients:

  • Fenugreek seeds 1tsp
  • Yogurt 2 tbsp
  • Turmeric 1 tsp
  • Brain 2 large
  • Oil 4 tbsp
  • Onion finely chopped 1
  • Tomatoes chopped 2
  • Red chili powder 1 tsp
  • Turmeric 1 tsp
  • All spices powder 1 tsp
  • Chili flakes 1 tsp
  • Salt 1 ½ tsp
  • Ginger julienne 2
  • Green chilli sliced 2-3
  • Coriander chopped handful

 

 

Method:
De-vein the brain with hand gently . Boil 2 cups water, add pinch of turmeric powder and the brains and boil for few minutes. Remove and set aside. Heat oil and fry onions until brown, add tomatoes and cook until they are soft. Add spices, yogurt and mix well. Add little water. Add brain and let cook gently for few minutes or until oil separates. Garnish with chopped chilies, ginger and coriander.

Ingredients:

  • Milk 1 Liter
  • Raisins 3 tbsp
  • Green cardamom Powdered 1 tsp
  • Chopped pistachios 2 tbsp
  • Hot water 1 tbsp
  • Almonds 1/4 cup
  • Saffron 1 tsp
  • Sugar 250 gm
  • Water 1 cup
  • Rice 4 tbsp
  • Karakpuris to serve

Method:
Peel and grind the soaked almonds to make a smooth paste. Dissolve saffron in hot water. Boil milk. Add almond paste and the soaked rice. Let the milk simmer on low flame stirring continuously. Then, add saffron water, sugar, cardamom powder, chopped pistachios, and raisins. Cook until slightly thick in consistency. Set aside to cool. Once cooled, put the bowl in refrigerator to chill few hours. Serve with karak puris.
