Chicken Teriyaki Stir Fry
Ingredients:
Oil 2 tbsp
Grated ginger 1 tbsp
Minced garlic 2 cloves
Boneless chicken breast fillets (cubed) 1/2 kg
Spring onions (sliced) 2
Dried shiitake mushrooms 1 cup
Soya sauce 3/4 cup
Brown sugar 1/4 cup
Tofu (cubed) 1 cup
Corn flour 1 tsp
Ground black pepper to taste

Method:
Heat oil in a pan. Sauté ginger and garlic until fragrant. Add chicken and sauté until cooked, about 5 minutes. Add mushrooms, soya sauce and sugar, mix well to combine. Add tofu and spring onions and sauté for a minute. Add corn flour earlier dissolved in water to thicken sauce; simmer for a few minutes. Season with ground black pepper.
