This is a creamy and succulent dish of chicken livers with a delicious peri sauce. It is great for an entree or appetizer.

Ingredients:

  • Chicken liver                                       ½ kg
  • Crushed garlic                                    1 tsp
  • Butter                                                   2 tbsp
  • Oil                                                           4 tbsp
  • Cream                                                   4 tbsp
  • Tomatos puree                                 2 tbsp
  • Crushed black pepper                    ½ tsp
  • Flour                                                      1 tsp
  • Peri sauce                                           2 tbsp
  • Salt                                                         to taste
  • Chicken stock                                     ¾ cup
  • Parsley                                                 as required
  • Water                                                   3-4 tbsp

 

Ingredients for peri sauce:

Whole red chilies                              ¾ cup

Sautéed onion                                   1

Garlic                                                    6-7 cloves

Crushed black pepper                    1 tsp

Salt                                                         to taste

Vinegar                                                ¾ cup

Lemon juice                                        4 tbsp

Sugar                                                     2 tbsp

Paprika                                                 1½ tbsp

Olive oil                                                4 tbsp

Oregano                                              ¾ tsp

Water                                                   as required

Salt                                                         1 ½ tsp

 

 

 

Method:

  • For peri sauce add whole red chilies, garlic, sautéed onion and water in a blender.
  • Blend it well until its consistency is think and saucy.
  • For chicken livers mix flour in liver chunks.
  • Fry liver in butter and oil.
  • In another pan remaining oil and butter fry garlic.
  • Also add tomato puree, black pepper and chicken stock. Let it boil.
  • Add cream and mix.
  • Finally add chicken liver and cook for a minute.
  • Dish it out and garnish with parsely.
