  • Overcooked white rice 250 gm
  • Yogurt 250 gm
  • Green chilies (chopped) 2-3
  • Green coriander (chopped) 2 tbsp
  • Ginger (chopped) 1 tbsp
  • Salt to taste

For the tempering:

  • Oil 4 tbsp
  • Mustard seeds 1 tsp
  • Cumin 1 tsp
  • Dried red chilies 2-3
  • Curry leaves 2 tbsp
  • Asafoetida a pinch


Mix rice with all the ingredients. Take it out in a platter and temper from top.
For temper, heat oil and mix all the ingredients. Give temper.


For Baras:

  • Black gram flour 1 cup
  • Ginger (grated) 1 tbsp
  • Raisins 2 tbsp
  • Cumin seeds ½ tsp
  • Green chilies (chopped) 1 tsp
  • Salt to taste

Other ingredients:

  • Yogurt 2 cups
  • Sugar 2-3 tbsp
  • Oil for frying


  • Seedless tamarind ½ cup
  • Seedless dates ½ cup
  • Water 2 cups
  • Jaggery ½ cup
  • Fennel powder ½ tsp
  • Coriander powder 1 tsp
  • Cumin powder ½ tsp
  • Cayenne pepper 1 tsp
  • Dry ginger powder ½ tsp
  • Salt to taste

For roasted masala:

  • Roasted cumin powder 1 tsp
  • Red chili powder 1 tsp
  • Roasted coriander powder 1 tsp
  • Black salt 1.5 tsp
  • Salt 1 tsp

To Garnish:

  • Date and tamarind chutney as required
  • Coriander (chopped) as required
  • Roasted masala 1 tbsp


For Baras mix all the ingredients together, whisk well. Then heat oil and fry well. Now soak in a salted water.
For Dahi, mix all the ingredients.
For Chutney, mix all the ingredients and cook well. Then blend well and cook well until it becomes thick. Now place baras in a serving dish and pour dahi. Lastly garnish with date and tamarind chutney, roasted masala and fresh coriander. Serve.

For thandai masala:

  • Pumpkin seeds ¼ cup
  • Almonds 10
  • Cashew nuts 10
  • Fennel 1 tbsp
  • Poppy seeds 2 tbsp
  • Green cardamoms 4-5
  • Black pepper (whole) 3-4
  • Pistachios 10

For mousse:

  • Whipped cream 1 cup
  • Sugar to taste
  • Cream ½ cup
  • Honey for drizzle


For thandai masala mix all the ingredients and grind well. Then heat ½ cup cream and add the grinded masala, mix well. Now add the whipped cream and sugar, mix well. Allow it to cool down. Then pour it to the glasses. Lastly drizzle with honey and garnish with thandai powder. Serve.
