Ingredients:

For Marination:

  • Chicken (curry cut) 1/2 kg
  • Ginger paste 1 tsp
  • Garlic paste 1 tsp
  • Lemon juice 2 tbsp
  • Salt 2 tsp

For The Curry:

  • Oil 1/2 cup
  • Cloves 2-3
  • Black peppercorns 5-6
  • Cinnamon 1 inch
  • Dry red chilies 3-4
  • Onions sliced 2
  • Tomato 1 cup
  • Yogurt 1/2 cup
  • Coriander powder 1 tbsp
  • Turmeric powder 1 tsp
  • Roasted cumin powder 1 tsp
  • Fenugreek leaves 1 tbsp
  • All spice powder 1 tsp
  • Cayenne powder 1 tsp

 

Method:

For marination, In a bowl mix chicken with the ingredients and let it marinate for 2-3 hours.
For the curry, heat oil in a pan. Add whole all spice and dry red chilies and let them crackle for a few seconds. Then Add onion and fry until slightly browned. Now add chicken along with the marinade and cook on high heat for 4-5 minutes. Then add tomato and cook for 4-5 minutes. Now add yogurt and cook for another 3-4 minutes. Then add coriander powder, turmeric powder and cayenne powder. Cover and cook until chicken is done. Now add all spice powder and fenugreek leaves and cook for another minute. Serve hot.

Ingredients for caramel:

  • Sugar 1/2 cup
  • Packed dark brown sugar 1/2 cup
  • Salt 1/4 tsp
  • Ground nutmeg 1/8 tsp
  • Soda 1/8 tsp

Other Ingredients:

  • Bread slices 4-5
  • Milk 2 cups
  • Butter, cubed 2 tbsp
  • Vanilla extract 2 tsp
  • Whipped cream 1 cup
  • Caramelized nuts to garnish

 

Method:
In a large heavy saucepan, combine the caramel ingredients except soda. Cook and stir over medium-high heat until thickened and bubbly. Then add butter and soda and stir for a while. Now add half of the mixture in milk, stir until smooth. Remove from the heat. Then arrange bread slices into the serving dish and pour this caramel milk over it. Now stir a remaining amount of butter scotch into the whipping cream and add this creamy layer on caramelized soaked breads. Then garnish with Caramelized nuts. Lastly cover and refrigerate until well set. Serve chilled.
