Follow this simple recipe and enjoy one of the tempting and toothsome dishes from Punjab.

INGREDIENTS FOR CHOLE:

  • Boiled chickpea                                 1 cup
  • Oil                                                     4-5 tbsp
  • Bay leaf                                             1
  • Cinnamon stick                                 1 inch
  • Cumin seeds                                      ½ tsp
  • Finely chopped onions                       1
  • Ginger garlic paste                             1 tsp
  • Finely chopped tomatoes                   2
  • Cayenne pepper powder                     1 tbsp
  • Turmeric powder                               ½ tsp
  • Coriander powder                              1 tsp
  • Cumin powder                                   ½ tsp
  • Dry mango powder                            ¾ tsp
  • Salt                                                    to taste
  • All spice powder                                ½ tsp
  • Water                                                2 cups
  • Finely chopped coriander leaves                  2 tsp
  • Water                                                as required

 

 

INGREDIENTS FOR BHATURE:

  • Flour                                       2 cups
  • Semolina                                  1 tbsp
  • Sugar                                       1 tsp
  • Salt                                          to taste
  • Baking powder                        ½ tsp
  • Baking soda                             ¼ tsp
  • Oil                                           2 tsp
  • Yogurt                                     1 cup
  • Water                                      as required

OTHER INGREDIENTS:

Flour                                        for dusting

Oil                                           for deep frying

 

Ingredients for Anardana Chutney

 

Ingredients:

  • Dry pomegranate seeds            3-4 tsp
  • Onion                                      1
  • Cumin                                     ½ tsp
  • Chopped green chili                  1
  • Lemon juice                             few drops
  • Sugar                                       ½ tsp
  • Chaat masala                           ½ tsp
  • Water                                      as required
  • Back salt                                  as required

Method:

  • In a blender, mix all the ingredients until the consistency seems fine.
  • Then take it out in a small dip bowl.

METHOD FOR CHOLE:

  • Heat oil in pressure cooker and sauté bay leaf, cinnamon stick and cumin seeds till they turn fragrant.
  • Then add finely chopped onions and ginger garlic paste.
  • Sauté till it turns golden brown. Now add tomatoes and sauté till the oil starts showing on top.
  • Further, add cayenne pepper powder, turmeric powder, coriander powder, cumin powder, dry mango powder, all spice powder and salt; sauté for a minute.
  • Then add chickpeas and 2 cups of water, give it a good mix.
  • Check the seasonings and let it cook on medium flame.
  • Now mix well and garnish with coriander leaves.
  • Serve with Bhatura.

 

METHOD FOR BHATURA DOUGH:

  • In a large mixing bowl add flour, semolina, sugar and salt.
  • Then add baking powder and baking soda and mix well.
  • Now add oil and rub with the flour, also add curd and start to knead dough, knead and punch the dough well for at least 5 minutes.
  • Then grease the dough with oil and cover with moist cloth; now set it aside for at least 2 hours.
  • Then roll the dough evenly into circles using rolling pin.
  • Now knead it well and get the perfect thickness.
  • Then heat oil in a deep frying pan or kadai.
  • Add one bhatura and press with the spoon to puff up once they begin to puff.
  • Splash oil over the bhatura till they puff completely.
  • Flip over and fry the bhatura till golden brown all over.
  • Then drain the poori into tissue paper to remove excess oil.
  • Fry all baturas the same way.
  • Lastly serve bhatura with chole curry.
