Ingredients:

  • Boiled potatoes diced 3
  • Green chilies chopped 3-4
  • Onion chopped 1
  • Curry leaves handful
  • Turmeric powder 1/2 tsp
  • Red chili powder 1/4 tsp
  • Mustard seeds 1 /2 tsp
  • Cumin seeds 1 tsp
  • White lentils 2 tbsp
  • Oil 2 tbsp
  • Salt 1 tsp
  • Frozen Puris to serve

 

Method:
Boil, peel and dice potatoes. Heat oil, add mustard, cumin, white lentils, green chilies, onions and curry leaves. Sauté till slightly brown. Add salt, turmeric powder and boiled potatoes. Cook till the spices have coated the potatoes well. Garnish with coriander leaves. Serve with large fried thin puris.

Ingredients:

  • Bow-tie pasta cooked 2 cups
  • Sun-dried tomatoes ¼ cup
  • Capsicum diced 1
  • Olives sliced ½ cup
  • Spinach 1 cup
  • Basil chopped ¼ cup
  • Parmesan cheese grated ½ cup

Ingredients for Dressing:

  • Olive oil ¾ cup
  • White vinegar 2 tbsp
  • Water 2 tbsp
  • Salt 1 tsp
  • Sugar 1 tsp
  • Oregano 1 tsp
  • Basil 1 tsp
  • Garlic 1 clove
  • Black pepper to taste

Method:
In a large bowl combine pasta, sundried tomatoes,
Capsicum, olives, spinach, basil, and parmesan cheese.
Toss until combined. To make the dressing: In a small
bowl whisk olive oil, vinegar, water, salt, sugar, oregano,
basil, garlic and salt and pepper. Drizzle the dressing over
the pasta salad and serve.

Ingredients:

  • Ginger, chopped 2 inches
  • Mint leaves, chopped a bunch of
  • Black salt 1/2 tsp
  • Salt a pinch of
  • Black pepper crushed a pinch of
  • Soda water or aerated white drink 1 bottle
  • Juice of lemons 2-3 lemon
  • Sugar 2 tbsp
  • Ice crushed as required

Method:
Grind together the ginger, mint leaves and sugar. Add in salt, lemon juice, black salt. Strain and add this mixture to a jug. After straining top with soda or the aerated drink and ice. Serve chilled.

Ingredients:

  • Red syrup 2 tbsp
  • Ice cubes as required
  • Milk 2 cups
  • Yogurt 1 cup

Method:
Blend all ingredients well in a blender and serve immediately.
