Spinach Mushroom Frittata is just what you need when you want something low-carb yet delicious!

Ingredients:

  • Olive oil 1 tsp
  • Crushed garlic cloves 1 tsp
  • Sliced onions 2
  • Sliced mushrooms 6-8
  • Spinach leaves 200 gm
  • Eggs 2
  • Egg whites 6
  • Milk 125 ml
  • Cheddar cheese/ mozzarella cheese 50 gm

 

Method:
Heat oil. Add the garlic and onion slices. Add the mushrooms and cook until the mushroom are tender. Add the spinach leaves and cook for a minute. Discard any excess liquid. Beat the eggs, egg whites, milk and cheese in a bowl. Add the vegetable mixture to this. Pour the mixture into a greased pyrex dish and bake in the oven at 180 degrees C until the frittata is just set. Place the frittata under a hot grill until browned and serve immediately.

Ingredients For Cookies:

  • Brown sugar 2/3 cup
  • Caster sugar 2/3 cup
  • Unsalted butter 8 tbsp
  • Butter 1/2 cup
  • Salt 1/2 tsp
  • Vanilla essence 2 tsp
  • Almond essence 1/4 tsp
  • Vinegar, cider or white 1 tsp
  • Baking soda 1 tsp
  • Egg 1
  • Flour 2 cups
  • Cocoa powder 1/4 cup
  • Milk 2 tsp
  • Dark chocolate chips 1 cup
  • White chocolate chips 1 cup

For The Filling:

  • Ice cream, softened 5 cups

 

Method:
Beat the butter, add in the sugars, butter, salt, vanilla and almond essences, vinegar, and baking soda, beating until smooth and creamy. Add the egg, beating again until smooth. Mix in the flour. Divide the dough in half. Mix the cocoa, milk and white chocolate chips into one half of the dough. Mix the dark chocolate chips into the other half of the dough. Use an ice cream scoop, scoop out the chocolate dough onto baking sheets. Rinse off your cookie scoop, then scoop balls of lighter dough right next to the balls of chocolate dough. Using your hands, press the two doughs together and roll them into a ball, being sure not to blend them. Bake the cookies at 180 degrees C for 9-11 minutes, until their edges are set and the middles are still slightly soft. Remove the cookies from the oven and cool. When the cookies are completely cold, place a scoop of ice cream on one cookie and cover it with the other and serve immediately.
