Ingredients

  • Mutton trotters 750 gm whole boil with 1 tbsp mixed whole spices till tender and 1 cup stock left
  • Oil ¼ cup + ¼ cup
  • Water ¼ cup
  • Ginger garlic paste 1 tbsp
  • Chopped onion 4 tbsp
  • Wheat flour 1 tbsp heaped mixed with 2 tbsp water
  • Paaya masala 3tbsp heaped
  • Chili powder 1 tsp
  • Crushed red pepper ½ tsp
  • Coriander leaves 2 tbsp for topping
  • Ginger sliced 2 tbsp for topping
  • Green chilies sliced 2 tbsp

METHOD

Boil Mutton trotters with whole spices till tender and 1 cup stock left. Heat ¼ cup oil and ¼ cup water in a handi, add boiled trotters, cook till heated, remove handi. In another handi heat ¼ cup oil, add ginger garlic paste with chopped onion, fry till golden, add paaya masala, all the seasonings, boil and fry trotters with stock, when mixture boiling, add dissolved aata paste, cook for 5 mins, serve with garnishes and nan.

  • Chops 250 gm
  • Kidneys 2 (All boiled till done)
  • Oil ½ cup
  • Ginger garlic paste 1 tbsp
  • Green chilies 3 chopped
  • Ginger julienne 2tbsp
  • Salt 1 tsp
  • Coriander crushed 1 tsp
  • Roasted &crushed cumin 1 tsp
  • Allspice ½ tsp
  • Black pepper 1 tsp
  • Yogurt ½ cup heaped
  • Cream 200 gm
  • Olive oil 4 tbsp
  • Green chilies chopped 4
  • Ginger julienne for garnishing

METHOD

Heat oil on a tawa, add all the boiled meat with ginger garlic paste, green chilies chopped, ginger julienne, all the dry spices, yogurt, cream, olive oil, cover and cook for 10 mins. Lastly top with greens and ginger julienne, serve with nan.
