Ingredients:

  • Chicken 1 kg (12 pieces)
  • Oil ½ cup
  • Ginger garlic 2 tbsp
  • Salt 1 ½ tsp
  • Red chili powder 2 ½ tsp
  • Coriander powder 3 tsp
  • Yogurt 1 ½ cup
  • Brown onion (ground) 4 tbsp heaped
  • Nutmeg (ground) ¼ tsp
  • Mace (ground) ¼ tsp
  • All spice powder ¼ tsp
  • Saffron ¼ tsp
  • Hot milk 2 tbsp
  • Screw pine water 1 tbsp

 

METHOD:

Heat oil in a pan, add ginger with chicken, fry for 5 mins, add salt, chili powder, coriander powder with ¼ cup water, fry well, add yogurt with brown onions, cover and cook till chicken tender and thick gravy left. Lastly add allspice, saffron, screw pine water, leave it on dum.

Ingredients:

  • Chicken 1 kg (12 pieces)
  • All spice powder 1 tsp
  • Roasted & crushed cumin 1 ½ tsp
  • Roasted & crushed coriander 1 ½ tsp
  • Chili powder 1 tsp
  • Yogurt 1 cup
  • Brown onion 3 tbsp
  • Ginger garlic 1 tbsp
  • Green chilies (chopped) 4
  • Butter 2 tbsp
  • Cream 2 tbsp
  • Salt 1 ½ tsp
  • Green cardamom ½ tsp
  • Nutmeg grinded ¼ tsp
  • Mace grinded ¼ tsp
  • Oil ¼ cup

METHOD:

Give cuts on chicken pcs with sharp knife, mix all the seasonings with yogurt and marinate chicken with this for 1 hour, heat 2 tbsp butter and ¼ cup oil, add marinated chicken, cover with lid, cook on low flame for 35 mins until chicken tender and gravy thick, serve with paratha.

  • Flour 2 cups
  • Semolina ½ cup
  • Eggs 3 – 4
  • Yellow color ½ tsp
  • Cardamom powder 1 tsp
  • Baking soda ½ tsp
  • Sugar ½ cup
  • Clarified butter for frying
  • Cream for serving

 

METHOD:

In a bowl mix together 2 cups flour, ½ cup semolina, 3 to 4 eggs, ½ tsp yellow color, 1 tsp cardamom powder, ½ cup sugar and make into a medium consistency batter with water, keep aside for 4 to 5 hours just before frying add ½ tsp baking soda. Heat ghee in a frying pan and pour 1 cooking spoon full of mixture for each mal pura, fry for 2 to 3 mins, turn and fry for another few mins till golden and crisp, serve with malai.
