Masala Bharay Karailay By Zubaida Tariq


  • Bitter Gourd ½ kg
  • Chopped Onion 4
  • Crushed Red Chili 1 tbsp
  • Turmeric 1 tsp
  • Ginger, Garlic Paste 1 tbsp
  • Nigel 1 tsp
  • Chopped Coriander 2 tbsp
  • Fennel  Seeds 1 tsp
  • Tamarind Juice ½ cup
  • Jiggery 1 tbsp
  • Curry Leaves few
  • Salt to taste
  • Tomato Paste 2 tbsp
  • Mustard Oil 1 cup


For Washing Bitter Gourd:

  • Turmeric 1 tsp
  • Tamarind Juice 1 tbsp
  • Salt 1 tsp
  • Jiggery 1 tsp



  1. Peel Bitter Gourd, wash and paste turmeric ,tamarind juice, salt and jiggery then wash again and in a skillet heat mustard oil put chopped onion make light pink.
  2. Now add ginger garlic paste crushed red chili turmeric chopped coriander fennel seeds and salt and cook then in a washed bitter gourd fill this masala and pack.
  3. Then in a frying pan heat oil and fry then add remaining tomato paste tamarind pulp jiggery and fried bitter gourd and let It cook and serve .
