Achari Aalu are the perfect thing to make when you’re not in the mood to cooking but yet want something yummy for dinner.

Ingredients:

  • Potatoes (boiled and small) ½ kg
  • Sliced onion 1
  • Tomato 1
  • Yogurt ½ cup
  • Bay leaves 6
  • Mustard seeds ½ tsp
  • Nigella seeds ½ tsp
  • Fennel ½ tsp
  • Fenugreek seeds ½ tsp
  • Red chili powder 2 tsp
  • Salt 1 tsp
  • Turmeric powder ½ tsp
  • Fresh coriander ½ tsp
  • Green chilies 4
  • Oil ½ cup
  • All spice powder ½ tsp

 

Method:
In the blender add tomato, onion and yogurt. Blend well. Then heat oil in a wok add bay leaves, mustard seeds, nigella seeds, fennel and fenugreek seeds. Fry well. Now add red chili powder, salt, turmeric powder and yogurt mixture. Cook well. Then add potatoes, green chilies and all spice powder. Mix well. Cover and cook for about 10 minutes. Lastly add fresh coriander and serve hot.

Ingredients:

  • Eggs (boiled) 4
  • Chicken kofta 1 packet
  • Onion (grinded) 1 cup
  • Yogurt 250 gm
  • Red chili powder 2 tsp
  • Salt 1 tsp
  • Coriander powder 1 tsp
  • Turmeric powder ½ tsp
  • Cumin (roasted) 1 tsp
  • Fenugreek seeds 1 tsp
  • Oil ½ cup
  • Green chilies as required
  • Fresh coriander for garnish

 

Method:
Heat oil in a pan and fry chicken kofta. Then remove and set aside. Now in the remaining oil add fenugreek seeds and fry well. Then add grinded onion and fry well. Now in a bowl add yogurt and all the spices. Mix well and add to the onion mixture. Then add 2 cups of water, boiled eggs and kofta. Cover and cook for about 10 minutes. Now dish out and add green chilies. Lastly garnish with fresh coriander. Serve hot.

  • Split chickpeas ½ kg
  • Butter 50 gm
  • Oil ½ cup
  • Fenugreek leaves 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Tomatoes 4
  • Red chili powder 1 tsp
  • Salt 1 tsp
  • Turmeric powder 1 tsp
  • Ginger 4 tbsp
  • All spice powder 1 tsp
  • Chicken cube 1
  • Asafoetida a pinch
  • Green chilies 6
  • Fresh coriander for garnish

Method:
Wash split chickpeas and boil it along with 2 cups of water, red chili powder, salt and turmeric powder. Once it is done, sieve and set aside. Then heat oil in a wok and fry ginger. Now add ginger garlic paste, tomatoes, fenugreek leaves, all spice powder, chicken cube and asafoetida. Mix and cook well. Then add boiled spilt chickpeas and cook for another few minutes. Now add butter and green chilies. Mix well. Lastly garnish with fresh coriander and serve hot.
