Ingredients:

  • Chicken mince ½ kg
  • Oil 2 tbsp
  • Onion chopped ½ cup
  • Salt 1 tsp
  • Chili powder 1 tsp
  • Ginger garlic 1 tsp
  • Allspice ½ tsp
  • Coriander leaves chopped 2-3 tbsp
  • Green chilies chopped 3
  • Grated cheese ½ cup
  • Crushed red pepper 1 tsp
  • Potatoes boiled and mashed ½ kg
  • Oregano 1 tsp
  • Olives chopped 2 tbsp
  • Sweet corn 2 tbsp
  • Capsicum cut into fine cubes ½ cup
  • Potato slims slightly crushed 2
  • Bread crumbs 2 cups
  • Eggs 2
  • Corn flour ½ cup

 

Method for mince:

Heat 2 tbsp oil, add chopped onion with seasonings, ginger garlic, fry for 10 mins, cook till done, add allspice, grated cheese, all the veggies, cool and mix in potato slims crushed. Now form this mixture into balls, dip in dry corn flour, then beaten eggs, then bread crumbs and fry golden.

Ingredients:

  • Chopped biscuits 1 cup
  • Chocolate chips ½ cup
  • Whipped cream 2 cups
  • Condensed milk ¾ tin
  • Coffee 1 tbsp
  • Tetra pack cream 3 tbsp

 

Method:

Cook cream, condensed milk and coffee till all is mixed well, cool, fold in whipped cream, add crushed biscuits and oreo chips, freeze for 12 hours until set.

Ingredients:

  • Mutton ½ kg
  • Basmati rice ½ kg
  • Onion 4 medium
  • Garlic 4 cloves
  • Ginger ½ inch piece
  • Fennel seeds 1 tbsp
  • Cumin seeds ½ tbsp
  • Black pepper whole 6
  • Black cardamom 2
  • Green cardamom 4
  • Cinnamon stick 1
  • Bay leaf 1
  • Thick yogurt ½ cup
  • Clarified butter 4 tbsp heaped
  • Ginger garlic paste 1 tsp heaped
  • Chili powder 1 tsp
  • Salt 2 tsp
  • Brown onion ½ cup

Method:

Finely chop onion, ginger and garlic, mix this with mutton, fennel, cumin seeds, black pepper corns, black and green cardamom, cinnamon, bay leaf, yogurt and salt, leave it to marinate for 2 hours, then add water to the above and pressure cook till the meat is tender, finely slice the rest of the onions. Heat oil in a pan, when mutton is done, strain the pcs from the stock and reserve the stock.heat ghee in a pan, add half fried onions, ginger garlic paste, chili powder and mutton, fry for 10 mins, add the washed soaked rice, fry for 2 mins, add in a stock to cover the rice, once the water starts to boil, reduce the heat, cook till rice done. Serve hot garnished with rest of the fried onion.
