Creamy Peri Chicken Livers make a remarkable tasting dish; especially because of it’s creamy texture and its spice infused gravy!

  • Chicken liver (small pieces) ½ kg
  • Crushed garlic 1 tsp
  • Butter 4 tbsp
  • Oil 2 tbsp
  • Cream 4 tbsp
  • Tomato puree 2 tbsp
  • Black pepper crushed ½ tsp
  • Flour 2 tbsp
  • Peri sauce 4 tbsp
  • Salt to taste
  • Chicken stock ½ cup
  • Parsley as required

Mix flour in liver. Fry liver with 2 tbsp butter and 1 tbsp of oil
In another pan remaining oil and butter fry garlic.
Also add tomato puree, black pepper and chicken stock. Let the boil comes.
Add cream and mix. Add chicken liver and cook. Dish out and garnish with parsely.

Ingredients for chicken marination:

  • Chicken (cubed) 750 gram
  • Garlic paste 1 tsp
  • White pepper 1 tsp
  • Salt to taste
  • Worcestershire sauce 4 tbsp
  • Vinegar 2 tbsp
  • Mustard paste 1 tbsp
  • Oil 4 tbsp
  • Red chili powder 1 tsp

Ingredients for sauce:

  • Oil 2 tbsp
  • Crushed garlic 1 tsp
  • Red chili powder 1 tsp
  • Ketchup ¾ cup
  • Chicken stock ½ cup
  • Tomatoes (boiled &blended) ½ cup
  • Vinegar 1 tbsp
  • Worcestershire sauce 1 tbsp

Ingredients for stick:

  • Wooden sticks as required
  • Tomatoes (cubed) as required
  • Capsicum (cubed) as required
  • Onion (cubed) as required
  • Coal for smoke
  • Fried rice for serving

Put all marination ingredients on chicken and leave for 2 to 3 hours. Now put chicken, capsicum, onion and tomatoes on sticks and grill them. Then give coal smoke. For sauce heat oil and fry garlic in it. Then add blended tomatoes, ketchup, chicken stock, vinegar, Worcestershire sauce and red chili powder and cook until sauce gets thick. Take out sauce in a bowl and serve with grill sticks and fried rice.


  • Rice boiled 4 cups
  • Capsicum finely chopped ¾ cup
  • Onion finely chopped 1
  • Tomato boiled and chopped 1 cup
  • Peri sauce ½ cup
  • Oil ½ cup
  • Chicken stock ¾ cup
  • Green coriander for garnish
  • Sweet corns ¾ cup

Ingredients for peri sauce:

  • Whole red chillies 1 cup
  • Grilled onion 1
  • Garlic 6-7 cloves
  • Black pepper crushed 1 tsp
  • Salt to taste
  • Vinegar ½ cup
  • Lemon juice 4 tbsp
  • Sugar 2 tbsp
  • Paprika 1 tbsp
  • Olive oil 4 tbsp
  • Oregano 2 tsp

Heat oil in pan and fry onion. Add boiled and chopped tomatoes fry.
Add peri sauce and chicken stock mix well and simmer.
Before remove add sweet corn and capsicum mix well.
After that dish out and garnish with green coriander.
For peri sauce cook whole red chilies, garlic, grilled onion in ½ cup of water till soft.
When batter cool down mix all of them and blend.
