Ingredients:

  • French beans 300 gm
  • Almonds blanched 50 gm
  • Rice 500 gm
  • Clarified butter 60 gm
  • Kaffir lime leaves chopped 4-6
  • Coriander leaves chopped ½ bunches
  • Turmeric ½ tsp
  • Ginger, chopped 20 gm
  • Garlic, chopped 20 gm
  • Onion, chopped 40 gm
  • Green chili, chopped 3-4
  • Black pepper a pinch
  • Salt a pinch

Garnish:

  • Sliced golden fried onions as required
  • Slit green chili as required

Method:
Clean the French beans and steam or blanch. Remove and place them into ice water to maintain crispiness and color. Heat oil, add the garlic, onion, ginger, sauté till onions are translucent. Add turmeric, green chili, beans, kaffir lime leaves and coriander leaves, salt and pepper. Add rice and very little water and let cook till rice is fully done and lastly add the almonds. Garnish with fried onions and green chili.

Ingredients:

  • Red syrup as required
  • Bananas 3
  • Yogurt 1 cup
  • Ice as required

 

Method:
Blend everything in a blender. Serve chilled.

Ingredients for tart:

  • Unsalted butter 150 gm
  • Salt a pinch of
  • Icing sugar 120 gm
  • Egg yolks 4 – 5
  • Vanilla essence 1 tsp
  • Coffee essence 1 tsp
  • Flour 260 gm
  • Cocoa powder 1/2 cup
  • Melted chocolate ¼ cup

For Chocolate ganache fling:

  • Chocolate 340 gm
  • Cream 300 gm
  • Fine sea salt ¼ tsp
  • Unsalted butter 30 gm

Garnish:

  • Salt as required
  • Whipped cream as required
  • Salted caramel sauce as required

 

Method:
Beat the butter, add salt and icing sugar. Whisk in the egg yolks and vanilla and coffee essences. Sift in the flour and cocoa. Mix well. The dough will be very soft and little sticky. Cut the dough in half and shape each dough into a disc. Wrap each disc in cling and refrigerate for at least 1 hour to chill. Roll one of the dough according to the size of your tart tin and dock the bottom of the crust with a fork. Chill in the freezer for at least 30 minutes until firm. Place the chilled tart pan on a baking tray and put a paper in it and fill with dry beans or ceramic beans. Bake at 180 degrees c for 20 minutes, remove the paper and beans and brush with some egg and return it to the oven and bake for a further 5 minutes until the shell is golden. Remove from the oven and let it cool down. Remove the tart shell from the pan and let it cool completely. Brush melted chocolate on the inside surface of the chocolate tart. Then let it set.
For the chocolate ganache filling: melt the chocolate, cream, milk and salt in a saucepan over medium heat, stir until the chocolate has melted and the ganache is smooth. While still warm, add the cubed butter. Stir until the butter has melted and mixed in completely. Let the ganache cool down slightly (but still has very pourable consistency). Then pour the ganache mixture into the tart shell. Allow the ganache to cool down further at room temperature. Sprinkle sea salt flakes on top, and refrigerate until the filling is set and the tart is ready to be served. Serve thinly sliced with dollops of whipped cream or a drizzle of salted caramel sauce.
