  • Chicken whole with cut mark) 1 kg
  • Chili powder 1 tbsp
  • Roasted and crushed cumin 1 tbsp
  • Coriander powder 1 tsp
  • Garlic powder 1 tsp
  • Onion powder 1 tsp
  • Paprika 1 tsp
  • Black pepper ½ tsp
  • Lemon juice 2 tbsp
  • Vinegar 1 tbsp
  • Olive oil 1/3 cup
  • Water 2 tbsp
  • Butter 2 tbsp


In a bowl mix all the seasonings together, mark deep cuts on the chicken, rub the chicken all over with the spice mixture, cover and refrigerate overnight. Pre-heat oven to 190 D, transfer the chicken into a greased roasting pan or dish, cover with foil, roast for 45 mins, remove, brush chicken with melted butter, serve hot with fajita rice and tomato salsa.


  • yogurt 1 ½ cup
  • spring onion Chopped 2 tbsp
  • Salt ½ tsp
  • Finely cut coriander leaves 2 tbsp
  • Olive oil 1 tbsp
  • Lemon juice 1 tsp
  • Crushed garlic 1 tsp


In a blender add ½ cup yogurt, spring onion, salt, coriander leaves, olive oil, lemon juice and garlic, blend till smooth, pour into the bowl, add in the remaining yogurt and mix, serve with roast and rice.


  • Rice ½ kg
  • Tomato 1 blended
  • Onion chopped 1
  • Crushed garlic 1 tbsp
  • Olive oil ¼ cup
  • Cumin powder 1 tsp
  • Salt 1 tsp
  • Water 3 cups
  • Chicken stock 1 cube
  • Coriander leaves chopped 2 tbsp
  • Black pepper ½ tsp
  • Paprika ½ tsp
  • Capsicum 1 sliced
  • Turmeric ¼ tsp
  • Spring onion sliced ½ cup


Ingredients for Salsa

  • Tomato blanched 4 medium
  • Onion roughly chopped 1
  • Jalapeno sliced 1
  • Spring onion sliced 2 tbsp
  • Coriander leaves 2 tbsp
  • Salt ½ tsp
  • Paprika 1 tsp
  • Lemon juice 1 tbsp
  • Cumin powder ½ tsp
  • Caster sugar ½ tsp


Heat oil, fry onion and garlic till transparent, add in water with stock cube, salt, blended tomatoes, cumin powder, black pepper, paprika and turmeric, cook till the boil comes, add rice, cover and cook on medium high flame till water dries, leave it on dum for 5 mins, stir in capsicum and spring onions.


In a food processor add onion, jalapeno, spring onion and garlic, pulse gently till just chopped, now add coriander leaves, salt, paprika, lemon juice, cumin powder and caster sugar, very carefully press the pulse button a few quick times, don’t over chop the salsa, transfer to a bowl.
