Stuffed Eggplant Recipe | Lazzat | Chef Samina Jalil

Sliced Eggplants filled with sauces and beef in between and baked to perfection. They taste as better as they look and you should try it this recipe too.

Ingredients:

  • Eggplant (elongated) 2
  • Beef mince (boiled) 1 cup
  • Tahini paste 1 tbsp
  • Chopped onion 1
  • Chopped tomato 1
  • Salt to taste
  • Paprika ¾ tsp
  • Green coriander as required
  • Cumin powder ½ tsp
  • Cinnamon 2 pinch
  • Crushed garlic 1 tsp
  • Finely cut mint 1 tbsp
  • Chopped pistachios 4 tbsp

Method:
Take eggplant cut and remove the inside. now add salt, oil, cumin powder and cinnamon then bake in oven till than eggplant soft. then heat oil and add chopped onion and crushed garlic sauté. After this in beef mince add salt, paprika, cumin and cinnamon add and mix well. now add oil rice, green coriander, tomato, finely cut mint and tahini paste mix. Then fill in eggplants and garnish with tahini sauce and chopped pistachios .
