Ingredients for green masala:

  • Green chilies 10
  • Mint leaves 1 cup
  • Coriander leaves 1 cup
  • Lemon juice ¼ cup
  • Garlic powder 1 ½ tsp
  • Ginger powder ½ tsp
  • Chili powder 1 ½ tsp
  • Salt 1 tsp
  • Coriander powder 1 tbsp
  • Paprika 1 ½ tsp
  • Crushed and roasted cumin 1 tsp
  • Turmeric ½ tsp
  • Allspice 1 tsp
  • Water ¼ cup
  • Boneless chicken flattened 1 kg
  • Green color few drops
  • Unsalted peanuts 2 tsp grounded
  • Coal to simmer
  • Dry flour 1 cup
  • beaten eggs with milk 3
  • crushed thin masala chips 5 packets

Ingredients for mango yogurt sauce:

  • Mayonnaise ¼ cup
  • Yogurt ¼ cup
  • Garlic paste ½ tsp
  • Salt ¼ tsp
  • Vinegar 1 tbsp
  • Crushed red pepper ½ tsp
  • Mango puree 2 tbsp

 

Method:
Blend all the ingredients in a blender, marinate chicken cubes in this for 2 hours, add peanut powder, green color, give dum of coal, in a bowl take plain flour, in another bowl beat eggs and milk, in the third bowl crush slims, now take chicken, spread in flour then in egg and milk mixture, roll in slim chips, deep fry until tender, serve with mango yogurt sauce.

Method mango yogurt sauce:
Blend all together, serve with green nuggets.

Ingredients:

  • Okra cut into rounds ½ kg
  • Oil ¼ cup
  • Tikka boti(chopped) 6
  • Cumin seeds 1 tsp
  • Onion chopped 1 ½ cup
  • Ginger chopped 1 tbsp
  • Green chilies chopped 2-3
  • Tomatoes 2 chopped
  • Coriander powder 1 ½ tsp
  • Turmeric ½ tsp
  • Aamchur powder 1 tsp
  • Chili powder 1 tsp
  • Salt ¾ tsp
  • Ginger julienne for garnish

 

Method:
Heat oil fry tikka botis and chopped them . now Wash and dry bhindi, chop into rounds, pan fry bhindi in half cup oil, cook for 10 mins, remove bhindi from pan, add the remaining oil on medium heat, add cumin seeds with chopped onion, chopped ginger and green chilies, cook for 2mins, add chopped tomatoes, cook till mushy, add the spices with ¼ cup water, stir well, add fried bhindi to the pan, leave it on dum without covering, garnish with ginger julienne, serve with roti.

Ingredients:

  • Mutton chops 1 kg

Ingredients to marinate:

  • Button red chilies 6
  • Kashmiri lal mirch 4
  • Coriander seeds 1 tbsp
  • Cumin seeds 1 ½ tsp
  • Fennel seeds 1 ½ tsp
  • Cloves 4
  • Cinnamon 1 stick
  • Black pepper whole 1 tbsp
  • Dried fenugreek 1 tbsp
  • Mustard seed ½ tsp
  • Mace 1
  • Brown sugar 1 tbsp
  • Salt 1 ½ tsp

Ingredients for wet masala:

  • Thick yogurt ½ cup
  • Onion 1 large
  • Garlic crushed 1 tbsp
  • Tamarind paste thick 1 tbsp

Ingredients for karahi:

  • Oil ¾ cup
  • Green chilies julienne 4
  • Ginger chopped 1 tbsp
  • Curry leaves 10-12
  • Turmeric ¼ tsp
  • Chili powder 1 tsp
  • Crushed red pepper 1 tsp
  • Black pepper ½ tsp
  • Roasted & crushed cumin 1 tsp
  • Roasted & crushed coriander 1 tsp
  • Salt 1 ½ tsp
  • Tomatoes 6
  • Yogurt ½ cup
  • Chopped coriander ½ cup
  • Green chilies whole 4
  • Ginger julienne 2 tbsp

 

Method:

Dry roast all the ingredients and grind them finely, add all the wet ingredients in a blender and blend well, and mix it with the dry spice powder, apply this marination to the chops, leave it for a few hours. Pre-heat oven, put the marinated chops in an oven tray, cover with foil, bake chops for 40 mins turning once in between.
Prepare karahi masala
Heat oil, add ginger, green chilies and curry leaves, add turmeric, chili powder and crushed red pepper with ¼ cup water, add tomato halves in the wok, cut side down, add ½ cup water, cover and cook on medium heat, once tomatoes tender, pull out the skin of tomato pieces, now smash the cooked tomatoes, fry well, add in yogurt, add ½ cup water with the baked chops and its masala, cook till oil separates. Lastly add coriander, salt, black pepper, kasuri methi, finally add whole green chilies and ginger julienne, serve with nan.
