  • Black Eyed Beans 1 cup
  • Tomato puree ½ cup
  • Chopped onion 1
  • Cumin seeds 1 tsp
  • Grated ginger 1 inch piece
  • Chopped garlic 3 cloves
  • Chopped green chili 2
  • Cinnamon 1 inch stick
  • Turmeric powder ½ tsp
  • Coriander powder 1 tsp
  • Red chili powder 1 tsp
  • All spice powder 1 tsp
  • Jaggery 1 tsp
  • Lemon juice 1 tsp
  • Salt to taste
  • Oil 1 tsp
  • Chopped coriander to garnish

Soak beans overnight in water. Wash and pressure cook the next day till soft and tender making sure they do not become mushy. Heat oil, add the cumin seeds, cinnamon stick, grated ginger, garlic, onion and green chilies and fry for few seconds. Stir in the tomato puree and sauté until oil starts separating. Add the turmeric powder, coriander powder, all spice powder, red chili powder, jaggery and the cooked beans with little water . Stir to combine. Reduce the flame to low and let simmer. Lastly add lemon juice and chopped coriander leaves. Serve hot.
