Ingredients:

  • Rice 1 kg
  • Chicken 1 kg 12 pcs

Ingredients for potli:

  • Bay leaf 2
  • Whole coriander 1 tbsp
  • Fennel seeds 1 tbsp

Other ingredients:

  • Cinnamon 2 sticks
  • Cloves 6
  • Black pepper 4
  • Green cardamom 2
  • Whole cumin 1 tsp
  • Chili powder 1 ½ tsp
  • Salt 1 ½ tsp
  • Tomato paste 1 tbsp
  • Tomatoes blended 3
  • Ginger julienne 1 tbsp
  • Green chilies chopped 6
  • Allspice 2 tsp
  • Garlic crushed 2 tbsp
  • Oil 1 cup
  • Onions 2 sliced

Ingredients for raita:

  • Yogurt 2 cups
  • Salt ½ tsp
  • Coriander grinded 2 tbsp
  • Roasted & crushed cumin 1 tsp
  • Black pepper ½ tsp

 

 

Method for raita:
Mix all, lastly add crushed black pepper.

Method:
Boil half chicken with 4 cups water with prepared potli, boil till chicken tender and 2 cups stock left. Marinate remaining leftover 4 pcs of chicken with 2 tbsp vinegar, 1 tsp salt, crushed garlic 1 tbsp, mix and leave it for 1 hour. Now deep fry the boiled and the marinated chicken till light golden. In another pan, heat 1 cup oil, fry onion light golden, add all the whole spices, cumin seeds, crushed garlic, fry for 1 min, add 3 blended and sieved tomatoes, fry well, add fried chicken, fry well, add green chilies, ginger julienne, allspice and the stock, remove the potli and discard, add salt, chili powder, cook till boiling, add in the soaked rice, cook when water dries and rice done, leave it on dum, serve with raita and shami kebab.

Ingredients:

  • Boneless beef 1 kg
  • Split Bengal gram soaked 250 gm
  • Cinnamon 3 sticks
  • Black cardamom 3
  • Button red chilies 8-10
  • Coriander seeds 1 tbsp
  • Bay leaf 1
  • Green cardamom 3
  • Star anise 1
  • Cumin seeds 1 tsp heaped
  • Black pepper whole 1 tsp
  • Large onion 1 sliced
  • Salt 1 ½ tsp
  • Turmeric ½ tsp
  • Water 2 cups
  • Chili powder 1 tsp

Other ingredients:

  • Ginger garlic paste 2tbsp
  • Red pepper crushed 1tsp
  • Coriander as required
  • Mint as required

Method:
Mix all above together in a pressure cooker and cook for 20 mins. Now open pressure cooker, add 1 tbsp ginger garlic paste and again cook till water dries completely and mixture is dry, remove black cardamom, cinnamon sticks and bay leaf from the mixture and ghoto well, so that the mixture is formed in raisha, then add in it finely chopped mint 2 tbsp coriander leaves chopped 3 tbsp, crushed red pepper 1 tsp, again mix well, the mixture should be hard not liquidly, let it cool completely, then add in 1 egg and mix well, make kebabs with the help of plastic sheet and lid as shown. Deep fry in fry pan, 3 mins on each side, remove and serve with pulao.
