Ingredients:

  • Eggplant 1/2 kg
  • Onion (finely chopped) 1 cup
  • Tomatoes (finely chopped) 1 cup
  • Garlic (finely chopped) 5 cloves
  • Green chili (chopped) 1
  • Red chili powder as required
  • Oil 1/2 cup
  • Fresh coriander 1 tbsp
  • Salt as required
  • Curry leaves few
  • Cumin 1tsp

 

Method:
Keep eggplant for roasting on an open flame till it’s completely cooked and tender. Then chop the cooked skinless eggplant finely or you can even mash it.
In a wok or pan, heat oil. Then add curry leaves, cumin and finely chopped onions and garlic. Sauté the onions till translucent. Then add chopped green chilies and mix. Add the chopped tomatoes and mix it well. Sauté the tomatoes stirring often, till the oil starts separating from the mixture. Now add the red chili powder and chopped cooked eggplant. Season with salt. Sauté for few minutes.
Finally stir in the coriander leaves or garnish it with them. Serve baingan bharta.

Ingredients:

  • Mutton 1/2 kg
  • Rice boiled 2 cups
  • Black cardamom 2
  • Green cardamom 2
  • Cinnamon ½ inch piece
  • Cloves 3-4
  • Cumin seeds 1 tsp
  • Peppercorns 1 tsp

For The Marination:

  • Ginger garlic paste 1tbsp
  • Fried onion 1/2 cup
  • Turmeric powder ½ tsp
  • Yogurt 1 cup
  • Salt to taste
  • Cayenne pepper powder 1 tbsp
  • Coriander powder 1 tbsp
  • Red chili powder 1tbsp
  • Clarified butter 1/4 cup

For Dum:

  • Green chilies 5
  • Clarified butter 2 tbsp
  • Tomato 2 (sliced)
  • Saffron water 1 tbsp
  • Fried onion ½ cup
  • All spice powder 1 tsp
  • Coriander leaves few

Method:
Add all the ingredients of marination with mutton and mix well; Set aside for at-least 6 hour.
Heat oil in a pan; Add whole spices and then marinated mutton, Cook on medium heat until the chicken is cooked well and the gravy becomes thick. Set aside,
In a pot layerd the biryani with rice mutton and dum ingredients and cook for about 15 minutes over low flame and serve hot.
