Kashmiri Khatte Baingan Recipe | Lively Weekends

Ingredients:

  • Eggplant ½ kg
  • Cumin powder 2tbsp
  • Mango powder 2tbsp
  • Red chili powder 1/5tbsp
  • Turmeric powder 1 tbsp
  • Kashmiri red chilies paste 1 tbsp
  • Onion chopped 2 large
  • Tomatoes chopped 3
  • Green chilies chopped 6
  • Salt to taste
  • Cooking oil 1 cup

 

Method:
In pan heat oil, add chopped onion & stir until golden brown, now add chopped tomatoes and chopped green chilies, cooked until tomatoes mashed, add ½ cup water, covered and let it cook for next 5 mints. Now cut each eggplant into 4 pieces with stem, stir fry eggplants in separate pan with 2 tbsps. Oil. Now set all stir fried eggplants on base of onion, tomatoes & chilies. In a bowl mix all dry ingredients, cumin powder, mango powder, red chili powder, turmeric powder & salt, add little water and make a paste, also add kashmiri chili paste, poured and covered eggplants with this paste, cover the lid and let it cooked for next 10 mints. After 10 mints. Kashmiri khatte baingan is ready, garnish with green chilies. Served with hot chapatti.

Ingredients:

  • Chicken 1kg
  • Ginger paste 1tbsp
  • Garlic paste 1tbsp
  • Onion paste 1 tbsp
  • Black pepper crushed 1 tbsp.
  • White pepper crushed ½ tbsp.
  • Cooking oil 1 tbsp.
  • Butter salted 1 tbsp.
  • Lemon juice 2 tbsp
  • Curd ½ cup
  • Salt as per taste

 

Method:
Heat oil, add paste of ginger, garlic and onion, stir all add chicken, toast chicken in paste, add curd, now, add black pepper, white pepper, juice of 02 lemons, and mix all together, than add butter and salt as per taste. Cook until chicken tender and dry. Garnish with lemon wedges & pepper on top. Served with chapatti or nan.

Apple mutton curry:

Ingredients:

  • Apples 5
  • Mutton 1 kg
  • Cumin seeds ½ tsp
  • Fenugreek seeds ½ tsp
  • Coriander ½ tsp
  • Cinnamon sticks 2 sticks
  • Black pepper 5-10
  • Black cardamom 2-4
  • Green cardamom 6
  • Raisins ½ cup
  • Red chili powder 2 tbsp
  • Turmeric powder 1 tbsp
  • Ginger paste 1 tbsp
  • Garlic paste 1 tbsp
  • Onion paste 2 tbsp
  • Green chilies 5-6 large
  • Salt to taste
  • Cooking oil ½ cup

 

Strawberry banana smoothie:

Ingredients:

  • Fresh strawberries 10
  • Ripe banana 02
  • Milk (full fat) ½liter
  • Ice cubes as desired
  • Sugar to taste

 

Apple mutton curry:

Method:
Heat oil, add cumin seeds, fenugreek seeds, roman coriander after fumes, add, cinnamon stick (whole), black pepper (whole), black cardamom (whole), green cardamom (whole), after few seconds add ginger, garlic & onion paste, let it golden brown and add mutton (boiled) with mutton stock sauté until aromatic, it’s time to add red chili powder ,turmeric powder & green chilies. Sauté & mix all together until gravy separates oil, cut small pieces of apples & add into the gravy of mutton, add raisins, in last add salt to taste. Cook until apples becomes tender, stir 1 -2 times in between, if required add water .garnish with raisins. Served with boiled rice or plain nan.

Strawberry banana smoothie:

Method:
In juicer add strawberries, peeled bananas, milk & iced cubes, blend until smooth creamy texture appeared, served chilled.
