Kashmiri Pulao is a very easy simple pulao garnished with nuts, raisins and fresh fruits.

Ingredients:

  • Rice (soaked) 2 cups
  • Cinnamon 1 inch
  • Bay leaf 1
  • Caraway seeds 1 tsp
  • Cloves 3
  • Green cardamoms 3
  • Black cardamoms 3
  • Fennel powder 1 tsp
  • Saffron (soaked in 2tbsp milk) 2 pinch
  • Clarified butter 1/4 cup
  • Salt to taste

For Garnishing:

  • Fried onion (sliced) 1 medium
  • Cashews 6
  • Almonds 6
  • Pistachios 6
  • Walnuts 6
  • Clarified butter 2 tbsp
  • Mix seasonal fruits 1 cup

 

Method:
Heat clarified butter in a deep pan. Add cinnamon, caraway seeds, bay leaf, cloves, green cardamoms and black cardamoms. Fry the spices till the oil becomes fragrant Sauté for a minute. Add 1 cup of soaked and drained basmati rice and stir.
Pour 2 cups of water and salt as required. Stir and cover the pan tightly.
When water evaporates lower the flame and add the dry fennel powder and soaked saffron and Cook for 10 minutes on low flame. Prepare the garnish. Heat 2 tbsp clarified butter in a frying pan and fry all dry and fresh fruits until fragrant. While serving the kashmiri pulao, garnish with the fried onions, fried fruit and dry fruits.

Ingredients for the Meatballs:

  • Mutton minced 300 grams
  • Cardamom powder 1 tsp
  • Salt to taste
  • Onions 2
  • Green chilies 2-3
  • Bread sliced 1

For the Curry:

  • Yogurt 1/2 cup
  • Bay leaf 1
  • Cinnamon 1 inch stick
  • Cloves 3
  • Fennel powder 1 tsp
  • Cumin powder 1 tsp
  • Dry ginger powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Salt to taste
  • Clarified butter for cooking
  • Green chili paste 1 tsp

 

 

Method:
In mixer add beef, cardamoms, salt, green chilies, bread sliced and onion fry well. Heat clarified butter add bay leaves, cinnamon and cloves fry well. Add onion fry till golden brown color comes. Add yogurt with 1 cup of water beat well add in wok. Add turmeric, dried ginger, salt, green chilies and fennel mix well. Add meat balls and cumin cook well.
