Ingredients:

  • Rice (soaked) 2 cups
  • Cinnamon 1 inch
  • Bay leaf 1
  • Caraway seeds 1 tsp
  • Cloves 3
  • Green cardamoms 3
  • Black cardamoms 3
  • Fennel powder 1 tsp
  • Saffron (soaked in 2tabs milk) 2 pinches
  • Clarified butter 1/4 cup
  • Salt to taste

For Garnishing:

  • Fried onion (sliced) 1 medium
  • Cashews 6
  • Almonds 6
  • Pistachios 6
  • Walnuts 6
  • Clarified butter 2 tbsp
  • Mix seasonal fruits 1 cup

 

Method:
Heat clarified butter in a deep pan. Add cinnamon, caraway seeds, bay leaf, cloves, green cardamoms and black cardamoms. Fry the spices till the oil becomes fragrant Sauté for a minute. Add 1 cup of soaked and drained basmati rice and stir.
Pour 2 cups of water and salt as required. Stir and cover the pan tightly.
When water evaporates lower the flame and add the dry fennel powder and soaked saffron and Cook for 10 minutes on low flame. Prepare the garnish. Heat 2 tbsp clarified butter in a frying pan and fry all dry and fresh fruits until fragrant. While serving the kashmiri pulao, garnish with the fried onions, fried fruit and dry fruits.

Ingredients:

  • Ash gourd (grated) 1 kg
  • Milk 2 cups
  • Cardamom powder 1 tsp
  • Sugar ½ cup
  • Clarified butter ½ cup
  • Whole dried milk 1/2 cup
  • Dry nuts (chopped) ½ cup

 

Method:
In pot, add grated ash gourd, milk. Mix well and cook on medium flame for 20-25 minutes or until it dries up and keep mixing in between. Add cardamom powder, sugar, mix well and cook for 8-10 minutes. Add clarified butter and cook on high flame for 4-5 minutes or until oil separates. Add whole dried milk, nuts and give it a good mix. Garnish & serve!

  • Green cardamom 3 pods
  • Whole cloves 2
  • Star anise 1
  • Peppercorns 2
  • Water 1 cup
  • Ginger 1 slice
  • Cinnamon stick ½ inch piece
  • Black tea 1 tsp
  • Milk 1 cup
  • Sugar 2 tsp

 

Method:
Lightly crush cardamom pods, whole cloves, star anise and peppercorns, and place in a small pot with 1 cup of water. Add ginger, cinnamon and black tea.
Bring to a boil for 5.6 minutes. Add milk. Bring to a simmer again and turn off the heat. Stir in sugar and Strain into a chai glass or mug.
