Ingredients:

  • Egg noodles boiled 1 packet
  • Oil ¼ cup
  • Mushrooms sliced ½ cup
  • Ginger grated 1 tbsp
  • Garlic chopped 1 tbsp
  • Thai red chilies cut diagonally 4
  • Green chilies cut lengthwise 4
  • Capsicum 1 cut into julienne
  • Spring onion ½ cup cut in 1 inch pieces
  • Onion 1 sliced
  • Salt & pepper 1 tsp each leveled
  • Peanuts ½ cup

Ingredients for Sauce:

  • Stock 1 cup
  • Soya sauce 4 tbsp
  • Brown sugar 1 tbsp
  • Chicken powder 1 tsp
  • Crushed red pepper 1 tbsp
  • Thai red curry paste 1 tbsp
  • Sriracha sauce 2 tbsp

 

METHOD:

Heat oil in a wok, stir fry ginger garlic, red and green chilies, add mushrooms, peanuts, capsicum, onion and spring onion, add noodles, toss well, add in all the ingredients for sauce, mix well, remove in a large platter, serve topped with roasted whole chicken.

Ingredients:

  • Chicken breast fillet 2 cut into 1 inch strips
  • Baking powder ½ tsp
  • Egg beaten 1 with 2 tbsp water
  • Salt and black pepper a pinch
  • Bread crumbs 2 cups
  • Sesame seeds 1 tbsp
  • Crushed red pepper 1 tsp
  • Oil for frying

Ingredients for Sauce:

  • Oil ¼ cup
  • Chopped garlic 1 tbsp
  • Chopped ginger 1 tbsp
  • Brown sugar 3 tbsp
  • Paprika ½ tsp
  • Soy sauce ¼ cup
  • Chicken powder ½ tsp
  • Siracha sauce 3 tbsp
  • Sweet chili sauce 3 tbsp
  • Water ¼ cup
  • Crushed red pepper 1 tsp
  • Corn flour 1 tbsp dissolved in ¼ cup water

 

METHOD:

Marinate chicken strips with baking powder, dip chicken strips in beaten egg mixture, coat with crumbs and sesame seed mixture, deep fry until golden.

METHOD FOR SAUCE:

Heat oil, sauté ginger garlic, add in all the ingredients, thicken sauce with corn flour paste, and toss the fried tenders in the sauce.

 

Ingredients:

  • Chicken 1 kg with skin
  • Grated ginger 1 tbsp
  • Chopped garlic 1 tbsp
  • Brown sugar 4 tbsp
  • Fish sauce 3 tbsp
  • Light soya sauce ¼ cup
  • Hoisin sauce 2 tbsp
  • Crushed red pepper 1 tbsp
  • Black pepper ½ tsp
  • Vinegar 2 tbsp
  • Oil 2 tbsp
  • Foil to bake chicken

 

METHOD:

Mix together all the ingredients in a bowl, prick chicken well, marinate chicken in all the given ingredients, put in aluminum foil on a baking sheet and bake on 180 D for 45mins until done, serve with noodles.
